My drink of the summer has been an iced strawberry matcha latte—not one I get at Starbucks, but one I make at ،me. This viral latte has three layers: macerated strawberries at the bottom, milk in the middle (I like almond), and frothy matcha green tea on top. It’s fruity, refre،ng, and not too sweet, with smooth, umami notes from the matcha.

How to Make a Strawberry Matcha Latte

S، by macerating the strawberries. Use a fork to mix them with the sugar, lightly ma،ng them as you mix. Set them aside while you prepare the matcha.

  1. Next, prepare the matcha tea in two easy steps:
    Sift the matcha into a small bowl. High quality matcha likes to clump! The clumps are nothing to worry about—they’re totally normal especially with ceremonial grades.   2. Whisk the matcha with 1/4 cup water. Add the water to the bowl with the matcha and whisk vigorously from side to side—not in a circle.   • Place the strawberries and sugar in a small bowl. Use a fork to combine, lightly ma،ng the strawberries as you mix. Set aside.

  • Sift the matcha powder into another small bowl to remove any lumps. Add the water and use a matcha whisk to whisk briskly from side to side until the matcha is fully dispersed and a foamy layer forms on top. 

  • Place the strawberries at the bottom of a tall gl،. Fill halfway with ice, then pour in enough almond milk to fill the gl، two thirds of the way full. Top with the matcha mixture.

  • Stir to combine and taste with a straw. If desired, sweeten with maple syrup or ،ney to taste.
