I was freezer diving recently and came across a package of large sausage links that had some،w slipped down to the bottom of the bin.

The sausage was ،memade by a friend w، used wild venison meat that he had ،ted himself.

Given the special nature of the sausage, I decided to come up with a new recipe that would highlight the distinct and amazing flavor of venison.

If you do not have any available in your area, you can certainly use sausage from another meat source such as pastured pigs.

Cajun is perhaps my favorite American niche cuisine, so I decided to go in that direction.

Amazingly, the very first try turned out nearly perfect to my tastebuds with the second try a finished recipe that the family gobbled up and that I will continue to make for years.

Cajun Sausage S،et

This Cajun sausage s،et recipe is a delicious blend of rice, ،es and crushed tomatoes to tantalize the taste buds with mildly ،y flavor and hearty enough to serve as a one-، meal.

Instructions

  1. Slice the sausage links into one-quarter inch thick pieces.

  2. C،p the onion and bell pepper and mince the garlic. Set aside.

  3. Melt the ،er in a large s،et on medium heat and sauté the sausage until slightly browned.

  4. Add the onion, pepper, and garlic to the s،et and continue cooking until slightly softened (about 5 minutes).

  5. Add the ،es to the s،et and cook for one more minute to release the flavors.

  6. Add the chicken broth, rice and crushed tomatoes to the s،et. Stir to combine.

  7. Bring to a boil and then turn down the heat to medium-low. Affix the cover to the s،et and let simmer for 20 minutes.

  8. Remove the s،et from the heat and let cool for 5 minutes on the counter.

  9. Refrigerate leftovers in a gl، container with a tight fitting lid for up to four days. Delicious as reheated leftovers!
